THE “CARIBBEAN SIDE” OF OLIVES AT THE MIAMI SOBE FOOD FESTIVAL (SOBE)

From February 24th to 26th 2023, we had a great “Olive Day” at one of the most awaited gourmet meetings in the United States: The Food Network South Beach Wine & Food Festival (SOBEWFF®) in Miami. Here the more “Caribbean” side of European Olives was revealed through various elaborations led by the renowned Spanish chef Alberto Astudillo. In fact, he brought their infinite possibilities to an expert audience and demonstrated their quality, versatility, and great flavor by preparing several dishes with this delicious millenary food that is part of the Mediterranean Diet.

To explain the great pairing capacity of Olives and their varieties, Alberto Astudillo made four exquisite dressings. He paired the Hojiblanca olive with strawberries, sweet paprika, key lime zest, and mint; with the Manzanilla olive he used orange, grapefruit, blood orange, thyme and lemon grass; with the Queen olive he used Gildas white anchovies (smoked sardines) and piparras. And with the stuffed olive he used chipotle, jalapeño, shallots, cilantro and bloody mary dressing.

He also brought the Mediterranean Diet to the American public by preparing three Strawberry, Raspberry and Pineapple gazpachos with Olives and Hojiblanca powder. An immersive culinary experience through which 450 chefs and professionals from the catering sector were able to live an “Olive Day” and discover what it means to “put Europe on your table”, message of the campaign in USA “Europe at your table with Olives from Spain“, promoted by Interprofesional de la Aceituna de Mesa (Interaceituna) and supported by the European Union.
