FISH WITH OLIVES

- 4 oz. olives stuffed with Pimiento
- 13 oz. tilapia thin loins
- 1 chopped onion
- 1 chopped pepper
- 1 chopped tomato
- 4 sprigs of parsley
- Extra virgin Olive oil
STEP BY STEP INSTRUCTIONS
Cut the olives into slices.
In a pan with a drizzle of extra virgin olive oil, make a stir-fry starting with the onion until it is transparent, add the pepper and tomato until they are soft, add the olives and cook all for 3 minutes more and reserve in a bowl.
In the same frying pan without washing it, put a drizzle of olive oil and cook the fish, 3 minutes on one side and two on the other. Add salt to taste.
In a dish add the fish, the stir-fry on top and finish with a sprig of parsley.
