ROASTED PEPPERS, POTATOES AND OLIVES SALAD
Flee the monotony and let yourself be surprised with this salad of roasted peppers, potatoes and olives … A recipe that vegetarians and vegans will also enjoy!
- 3 oz. Manzanilla olives pitted
- 3 oz. Hojiblanca olives pitted
- ½ green pepper
- ½ red pepper
- 4 potatoes
- Extra virgin olive oil
STEP BY STEP INSTRUCTIONS
Wash the potatoes well and cut into pieces with skin on. Cut the peppers in half, remove their seeds and cut into thick strips.
In a baking tray, put the peppers and potatoes, add a generous stream of extra virgin olive oil, salt, pepper and stir. Bake at 350ºF for 50 minutes.
Remove from the oven and set on a tray, finish with a few sprigs of parsley and the olives on top.
