Happiness, which undoubtedly also increases when we can enjoy that time outdoors with good food.

And we are not only referring to the taste, we also refer to foods that are good for our health, such as olives.

Because who said that a picnic, a barbecue, or an outdoor eating cannot be healthy?

In barbecues, we can have more vegetables on the grill than meat, or even dare to propose vegan meats: sausages, hamburgers, skewers … Surely more than one won’t even notice the difference!

In addition, outdoor meals have another very healthy advantage: they encourage you to practice sports!

BABY BACK RIBS WITH MANZANILLA STUFFED WITH PIMIENTO OLIVE BBQ SAUCE

INGREDIENTS

Dairy free, Gluten free

  • 100 g of Manzanilla stuffed with pimiento olives
  • 1 k of pork ribs (top part)
  • 80 ml of water
  • 250 g ketchup
  • 3 tbsp white wine vinegar
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp perrins sauce
  • 1 tbsp mustard
  • ½ tbsp of paprika
  • Salt
  • Pepper
  • Aluminum foil

STEP BY STEP INSTRUCTIONS

Step 1

Chop the Manzanilla stuffed with pimiento olives into thin slices and into small squares.

Step 2

Put the water, ketchup, vinegar, honey, brown sugar, perrins sauce, mustard and paprika and the chopped olives in a saucepan and heat for about 15 minutes over low heat, until it becomes the consistency of barbecue sauce, remove and let it cool.

Step 3

On top of an aluminum foil, which will then be used to wrap our ribs, season the ribs and spread the barbecue sauce over them very well. Wrap them by closing the aluminum foil.

Step 4

Roast the ribs wrapped in aluminum foil in the oven on a baking tray, previously heated to 300º for 2 hours. After remove from the oven and remove the paper.

Step 5

Again spread the ribs generously with sauce, reserving a little of it to accompany it, and raise the temperature to 375º. Bake for 10 minutes to brown the ribs. Remove and serve.

Step 6

Serve the ribs with the savory Manzanilla stuffed with pimiento olive barbecue sauce and olives stuffed with whole peppers.
