And lastly, because they can be used from a breakfast, to a snack, to lunch or dinner.

With olives, and very little more, you have the menu resolved!

ENERGY BALLS WITH MANZANILLA OLIVES

INGREDIENTS

  • 1 cup pitted of green Manzanilla olives
  • 1/2 cup of dates
  • 1/3 cup of shelled peanuts
  • 1/3 cup of peeled almonds
  • 1 cup of rolled oats
  • 1.5 oz. of dark chocolate 70%
  • 2 tbsp of honey
  • 2 tbsp of peanut butter

STEP BY STEP INSTRUCTIONS

Step 1

Slice 5 manzanilla olives and dice the rest. You can use a knife or a food processor to do so. Do the same with the dates, peanuts, almonds, and chocolate.

Step 2

Add the diced olives, rolled oats, dates, almonds, peanuts, dark chocolate, honey, and peanut butter to a bowl. Mix to make a uniform dough.

Step 3

Divide the dough into 1 tablespoon portions, shape into small balls with your hands, and assemble them on a tray or a board.

Step 4

Top each Energy Ball with sliced olives for garnish.
