“TIME FOR ME” TABLE  

Before the Pandemic, we barely had time to dedicate to ourselves.

The hustle and bustle of everyday life, routine, and even social commitments left very little space for such everyday things as enjoying a relaxing moment at home.

Because the return to comfort does not mean becoming more comfortable and neglecting what we eat, quite the opposite! It means spending more time on everything that makes us feel good and enjoying it in a more relaxed way!

A very Mediterranean philosophy, which fits perfectly with one of the star products of this diet: olives.

Because what is more comfortable than starting the day with a fluffy olive bread for breakfast? Or more relaxing than spending time preparing your own pizza dough, and adding the perfect touch with a few slices of olives?

BACON CHEESE FRIES WITH QUEEN OLIVES

INGREDIENTS

  • 9 oz. pitted Queen olives

  • ½ cup sour cream or creme fraiche

  • Scant ½ cup mayonnaise

  • 1 plain yogurt

  • Juice of half a lemon

  • 1 tbsp. chopped chives

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • ½ tsp. ground black pepper

  • 1 ¾ lb. potatoes, peeled and washed

  • 7 oz. smoked bacon in strips

  • 1 ¾ cups (5 oz.) grated cheddar cheese

  • Salt

  • 1 quart vegetable oil for frying

STEP BY STEP INSTRUCTIONS

Step 1

Dice one quarter of the olives very finely and reserve the diced and whole olives separately.

Step 2

In a bowl, combine the diced olives, sour cream, mayonnaise, yogurt, lemon juice, chives, garlic powder, onion powder, and ground black pepper. Mix well and set aside.

Step 3

Cut the potatoes into sticks about ½ in. thick and set aside.

Step 4

In a frying pan, brown the bacon strips over medium-high without adding oil. Drain on a paper towel.

Step 5

Heat oil in a pan and fry the potatoes until they begin to brown. Remove and drain on paper towels.

Step 6

Arrange the potatoes in a shallow baking dish and pour the reserved sauce over them. Add the grated cheese and the bacon. Broil in the oven at 475ºF until the cheese melts.

Step 7

Once the cheese has melted, remove the dish from the oven and sprinkle the rest of the whole olives on top. Serve.
